Avocado, cucumber & sorrel soup

Requires: 1 ripe avocado, Generous handful of sorrel leaves, no stalks, ¼ large cucumber, roughly diced, 250g Greek-style yoghurt, 1-2 garlic cloves, Salt and freshly ground black pepper, Splash of water, Coriander to garnish

Gazpacho

Requires: 1 large slice white bread, crusts removed, 1 green pepper, seeded and chopped, 1 small onion, chopped, 2 garlic cloves, ½ cucumber, peeled, seeded and chopped, 3 large sun-ripened tomatoes, skinned and seeded, 6 whole blanched almonds, toasted, 1 tsp salt, Pinch of ground cumin, 500ml water, 1 tbsp chopped parsley, 100ml olive oil

Sorrel, pea and emmental tartlet

Requires: 500g short crust pastry, 1tbls olive oil, 100g crushed peas, 250g sorrel leaves washed and picked, 1 garlic clove finely chopped, 4 free-range eggs, 200ml double cream, salt and cracked black pepper

Creamed Leek & Roasted Garlic Soup

Requires: 150g Leek Whites, 2 Cloves Garlic, 700ml Veg/Chicken Stock, 75ml Double Cream, 30g Chopped White Onion, 15g Butter, ¼ Head of Celery, 10g Finely Chopped Parsley, Salt, Pepper

Native oysters with shallot vinaigrette

Requires: 12 Native Oysters, 1 shallot - finely chopped shallot, 2 tbsp sherry vinegar, 2 tbsp olive oil, ½ lemon squeezed, 50g parsley chopped
