Mango buttered cream dessert

Requires: 55g/2oz butter, 175g/6oz white breadcrumbs, 2 tbsp demerara sugar, 1ml/¼tsp ground ginger, 1 ripe mango, peeled, stoned and diced finely, 1 lime, grated rind and juice, 1 tbsp clear honey, 450ml/¾ pint Greek yoghurt

Peppercorn and herb-crusted venison with tomato chutney & kale

Requires: For the peppercorn and herb-crusted venison (per person): 150g/5½oz venison fillet, dash olive oil, salt and freshly ground black pepper, 25g/1oz butter, 2 garlic cloves, peeled and crushed, 4 sprigs fresh thyme, leaves only, 55g/2oz fresh breadcrumbs, small handful fresh parsley, chopped, salt, to taste, 1 tsp black peppercorns, crushed. For the homemade tomato chutney: 2 tsp red wine vinegar, 150g/5½oz fresh cherry tomatoes, quartered, 1 tsp caster sugar, 2 tsp tomato purée, salt and freshly ground black pepper. For the buttered kale: 25g/1oz butter, large handful fresh kale, chopped, salt and freshly ground black pepper, splash hot water

Requires: 2 tbsp brown sugar, 2 figs, 50ml/2fl oz white wine, 2 tsp balsamic vinegar, 2 slices ciabatta, 2 tbsp olive oil, 50g/1½oz gorgonzola, 1 tsp chopped fresh parsley, freshly ground black pepper
