Smoked mackerel mousse
Ingredients:
150g smoked mackerel fillet
150ml double cream
1 lemon, juiced
1 small bunch chervil
A few chives, chopped
Method:
Place the smoked mackerel and cream in a mixer and blend for only as long as is needed to combine the two, to prevent the cream splitting. Add lemon juice to taste, chopped chive and picked chervil, then keep in the fridge.
Serve with Melba Toast.
