Avocado, cucumber & sorrel soup
Ingredients:
Serves 6
1 ripe avocado
Generous handful of sorrel leaves, no stalks
¼ large cucumber, roughly diced
250g Greek-style yoghurt
1-2 garlic cloves
Salt and freshly ground black pepper
Splash of water
Coriander to garnish
Method:
Place all of the ingredients into a food processor and blend until smooth. Taste and adjust the seasoning if necessary.
Garnish with coriander.
