Rhubarb and Apple Crumble
Serves 4-6
Requires:
2 lbs. of rhubarb
2 braeburn apples
1 inch cubes, cored and peeled
2 tbsp water
3 ounces caster sugar
2 teaspoon grated fresh stem ginger
Topping:
150g/5oz butter, softened
75g/3oz musli
75g/3oz demerara sugar
75g/3oz flour
Method:
- Preheat the oven to 180C/350F/Gas 4.
- Cut the rhubarb and apple into 1cm/ 1/2 in long pieces and place into deep baking dish, sprinkle with the water, caster sugar and ginger.
- For the topping rub the butter into the flour and sugar to make the crumble topping, and when nearly done add muesli and mix. Sprinkle over the rhubarb and bake in the oven for 25 minutes at 175C.
- Remove and allow to cool slightly before serving with double cream.
To serve:
Pour double cream over and enjoy this delicious dessert.
